Nettle soup
One evening we decided to go and grab some stinging nettle to make some nettle soup. We took a stroll to the Haukivaara mine where I knew from (painful) experience that there used to be a lot of nettle.
As I remembered, minus the crying.
Armed with rubber gloves to alleviate the stinging.
The next day it was time to prepare the soup. First thing to do is to parboil the nettle. Then I put them in the mixer and prepare a soup base.
Recipe:
1 bag of nettle sprouts
Vegetable stock
1,5 l water
Garlic
Butter
Flour
1 Egg for each person
Lots of black pepper
Parboil the nettle. Then mix in a mixer. Make a soup base from butter and flour. Add water, vegetable stock, nettle and garlic. Boil for 10 minutes. Prepare a couple of had boiled eggs and serve them in the soup. Season with a lot of black pepper.
